1 preservative free and yeast free mountain bread wrap (gluten) or suitable GF tortilla
½ cup chopped iceberg lettuce
Celery sliced optional
optional garnish with chives
salt to taste
METHOD
Place chicken, ¼ tsp salt and egg in a saucepan with enough cold water to cover by 3cm. Bring to the boil, cover and simmer for 5 minutes. Remove egg, chilling in cold water, and continue to cook chicken for another 3-4 minutes, skimming any white scum from the surface. Stand chicken for 5 minutes, before removing and slicing. Peel and roughly chop egg.
Arrange chicken and egg on wrap, top with lettuce and celery
