GLUTEN FREE “CITRUS” TART (GF)

Ingredients

  • Base:
  • 220g gluten free scotch finger biscuits (e.g. Woolworths free from gluten)
  • 100g butter, melted
  • Filling:
  • 6 eggs
  • 140g caster sugar
  • 3/4 cup thickened cream
  • 2 tsp citric acid mixed with a little bit of water

Instructions

Preheat oven to 180 degrees

Blitz the biscuits into fine crumbs and then mix with melted butter until combined

Press firmly onto base and sides of a 24cm flan tin with removable base and refrigerate

Whisk together eggs, sugar, cream and citric acid in a large bowl. Pour over biscuit base and bake for 30 minutes or until filling is just set
