Mashed Swede with Sour Cream and Chives

Ingredients

  • 800 grams to 1 kg of Swede , chopped into chunks (about 2-3 cm)
  • 2 teaspoons butter
  • 1/4-1/3 cup to sour cream
  • 2 Tbsp chopped fresh chives
  • Salt

Instructions

Boil the chopped swede until tender, drain and return to the pot

Reduce the heat to low and let the swede steam for a minute or two

Mash with a potato masher

Add butter, sour cream and salt to season

Just before you serve mix in the chopped chives
