Asparagus and Pea Crustless Quiche
Ingredients
- 1/2 cup of small ASPARAGUS woody ends removed and sliced
- 1/2 cup of frozen PEAS
- 2 shallot stems sliced
- 5 eggs
- 1 cup of cottage cheese
- 1/4 cup of cream
- Salt to season
- Oil to grease dish
Instructions

Preheat Oven at 180 degrees

Oil pie dish to make it non stick

Mix vegetables together and arrange in the base of pie dish

Whisk the eggs in a large jug or bowl, stir in the cottage cheese and cream, then season with salt

Pour over vegetables

Bake for 25 to 30 minutes
