Combine almond milk, chia seeds and maple syrup in a bowl. Mix well until combined and the mixture starts to thicken. Give it another mix after 5 minutes then store covered in the refrigerator for at least an hour to thicken. To serve - Slice the top off the pomegranate and score the sides with a knife. Submerge the pomegranate into a bowl of water and crack it open with your hands. Remaining in the water, gently peel off the rind and separate the seeds from the white flesh. Scoop out all the flesh and rind floating on the surface and then drain your pomegranates in a colander. Stir chia pudding well before serving and add a bit of water or milk to the pudding if it becomes too thick. Top with the pomegranates.
