Carrot and Zuchinni Salad with Maple Yoghurt Mayo (GF)

Ingredients

  • 1.5 cups  Carrot  grated 
  • 3/4 cup Zucchini (peel for moderate salicylates)
  • 2 tsp Maple Syrup
  • 1.5 TBS each plain Greek  yoghurt
  • 2 TBS of raw cashews  

Method

Combine ingredients, adding nuts  just before serving

Notes

  • Optional add some grated ginger if you can tolerate a liberal chemical diet – this is low in amines and glutamate but contains higher salicylates
