🟡 Roasted Leek and Sweet Potato Salad

Roasted Leek and Sweet Potato Salad

Serves: 6

Ingredients

  • 1kg orange sweet potato, unpeeled, cut into 4cm pieces
  • 3 small leeks, trimmed, washed, cut into 2.5cm slices
  • 1 tbsp oil
  • 125g Plain Greek Style Yoghurt
  • 50g rocket (replace with mixed lettuce leaves for FCD moderate salicylates)

Instructions

Preheat oven to 190C/170C fan-forced. Place sweet potato, leek and oil in a large roasting pan. Toss to coat.

Roast for 30 to 40 minutes or until golden and cooked through.

Once cooked toss with rocket or mixed lettuce leaves

Serve drizzled with yoghurt
