CARROTS (S) sliced and peeled | 2 cups (500 mL) |
PARSNIPS(S) , sliced and peeled | 2 cups (500 mL) |
water | 2 Tbsp (25 mL) |
maple syrup | 1/2 cup (125 mL) |
Butter or suitable df spread e.g. nuttelex (low chemical and Vegan) | 2 Tbsp (25 mL) |
Parsley, chopped | 2 Tbsp (25 mL) |
- Combine carrots with parsnips and water.
- Microwave, covered on High power for 10 minutes, stirring halfway through; drain.
- Stir in maple syrup and butter until richly glazed. Sprinkle with chopped parsley.
