Ingredients
- 1 cup cucumber, peeled & sliced or diced
- 1 cup bok choy, finely shredded
- 2 tbsp fresh chives, chopped
- 200 g chicken breast, grilled & sliced
- 1 tsp mild oil
Method
- Slice cucumber & bok choy, toss with chives.
- Grill chicken, slice thinly.
- Toss with oil
Optional Serve Suggestions
- Add Β½ cup steamed rice (medium GL β balance with greens/protein).
- For vegetarian: replace chicken with egg or tofu (low GL).
