🟨 Cucumber, Bok Choy & Chive Salad with Chicken

Serve: 2 | GI/GL: Low

Ingredients

  • 1 cup cucumber, peeled & sliced or diced
  • 1 cup bok choy, finely shredded
  • 2 tbsp fresh chives, chopped
  • 200 g chicken breast, grilled & sliced
  • 1 tsp mild oil

Method

  1. Slice cucumber & bok choy, toss with chives.
  2. Grill chicken, slice thinly.
  3. Toss with oil

Optional Serve Suggestions

  • Add Β½ cup steamed rice (medium GL – balance with greens/protein).
  • For vegetarian: replace chicken with egg or tofu (low GL).

Notes

  • RPAH Friendly (peel cucumber for moderate salicylate) RPAH Flex – Liberal (with peel)
  • Migraine-friendly: cucumber, bok choy, chicken all safe.
  • Balance: rice optional; keep portions small.
  • Calories: ~230 per serve (without rice).
