Cashew and Chickpea Dip (GF, DF, VG)

Serve with plain rice crackers and suitable vegetable sticks

Cashew and Chickpea Dip

Ingredients

  • 1 large can (400g) of chickpeas rinsed and drained
  • 1/2 cup of cashews
  • 1 large clove of garlic or 2 small
  • 2 Tablespoon of canola oil or rice bran oil
  • 1/4 cup of water
  • Small pinch of salt
  • Optional 1.5 Tablespoons of Pure Maple Syrup (gives a nice complimentary sweetness)

Instructions

Place all ingredients in a blender and blend until smooth. If consistency is too thick, add a little extra water.
