Cashew Biscuits

To make these biscuits you need

  • 1/2 cup of raw cashews (freshly roasted and grounded, but not to a paste)
  • 1/4 cup of plain flour, or brown rice flour, or suitable Gluten Free all purpose flour
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1/2 cup of butter or Nutellex (DF) or other suitable dairy free spread


In a blender combine flour, ground nuts, and sugar and cut in butter or df spread and blend until l mixture resembles fine crumbs. Form mixture into a ball and knead gently until smooth.


On a lightly floured surface, roll dough, use a glass or cookie cutter to cut circles. Place about 2 cm’s apart on a tray lined with baking paper. Lightly sprinkle with additional sugar. Optional lightly press a whole cashew nut in the center of each cookie.


Bake at 190 C for 8 to 10 minutes or until lightly browned. Transfer cookies to a wire rack and let cool.
