Baked Butternut Pumpkin, Asparagus And Chickpeas (GF, DF, VG)

Roast Chicken or Roast Lamb and green beans (optional brussels)

Ingredients

  • 400 grams BUTTERNUT SQUASH – PUMPKIN
  • 1/2 cup Chickpeas canned (optional)
  • 1 Bunch of ASPARAGUS
  • 1 Tablespoon Suitable Oil
  • 2 Garlic Cloves

Instructions

Crush garlic add to oil in a bowl

Cut pumpkin into cubes approx 1.5cm

Add to bowl of oil with chickpeas (if using)

Lay on tray and bake for about 30 minutes

Remove from oven add Toss through Asparagus

Bake for a further 15 minutes
