🟢 Egg and Lettuce Sandwich

Egg and Lettuce Sandwich

Ingredients

  • 2 slices of suitable bread
  • 1 egg, hard boiled (boil for 5 minutes)
  • 1 teaspoons of butter or for dairy free option (e.g. Nuttelex Original) or 2tsp mayonnaise (home made with suitable oil - see recipe in the RPAH Allergy Unit Friendly Food Cookbook)
  • 2 iceberg lettuce leaves, shredded
  • Method
  • ​
  • Peel egg and add to a small mixing bowl.
  • Add mayonnaise to egg and mash with a fork.
  • Spread egg mixture onto one slice of bread.
  • Add shredded lettuce
  • Top with second slice of bread and cut in half or into triangles
