Failsafe Chicken Schnitzel with mash and garlicky leek and peas

GF option, contains dairy, natural glutamate (g) in the peas

Prepare bread crumbed Shnitzel or for GF rice crumb or quinoa flake crumbed schnitzel (GF)

Meanwhile – peel white potato thickly and cut into even chunks (about 3 cm) place in water and bring to the boil.  Boil for 15-20 minutes until tender then drain.  Mash with a little butter and milk

While mash is cooking prepare GARLICKY LEEK AND PEAS (contains moderate glutamate)

Now cook Schnitzel in heated canola oil. Cook for about 4 minutes each side.
