Roasted Garlicky Pumpkin (V)(GF)(DF)(FID)

Ingredients

  • 2kg butternut pumpkin, peeled, cut into 3cm pieces
  • 4 garlic cloves, unpeeled
  • 2 tbsp olive oil (light is moderate salicylate, dark has more salicylates) - or other suitable oil

Instructions

Preheat oven to 200°C /180°C fan-forced. Line 2 large baking trays with baking paper. Place pumpkin and garlic in a bowl. Add oil.

Season with salt

Toss to coat.

Arrange pumpkin mixture, in a single layer, on prepared tray. Bake for 40 minutes or until pumpkin is golden and tender.

Notes

ADJUSTMENT - instead of garlic try a garlic infused low fodmap olive oil for PLUS/Fodmap friendly, if tolerated also season with pepper (salicylates). (Original source TASTE - has some modifications)
