Friendly Food intolerance adaption
If you have problems with higher salicylate foods or are very sensitive to glutamate, swap steamed broccoli to steamed green beans or other suitable veg. Use light olive oil not virgin olive oil or other suitable oil e.g. canola or rice bran.
Ingredients:
- 2 boneless, skinless chicken breasts
- 2 medium sweet potatoes, peeled and diced
- 1 broccoli crown, cut into florets (a)(S)
- 1 tbsp olive oil (S)
- Salt
- Optional Pepper (S) if tolerated (white pepper is lower in salicylates than black pepper)
Instructions:
- Preheat oven to 375°F (190°C).
- Place chicken breasts on a baking sheet. Drizzle with olive oil, season with thyme, salt, and pepper.
- Toss the diced sweet potatoes with a little olive oil, salt, and pepper, then spread them around the chicken on the baking sheet.
- Bake for 25-30 minutes, until the chicken is cooked through and the sweet potatoes are tender.
- While the chicken and sweet potatoes bake, steam the broccoli for 5-7 minutes until tender.
- Serve the chicken with the sweet potatoes and steamed broccoli on the side.
