 Baked Swede, Carrot and Leek Trio

Air Fryer or Oven

Serves 3–4


Ingredients

  • 2 swedes (~800 g), peeled and cubed
  • 4 carrots (~400 g), cut into batons
  • 1–2 leeks (~160 g, white part only), sliced into half-moons
  • 1 tbsp olive oil
  • Salt (optional)

 Method — Oven Version

1. Preheat

  • Preheat the oven to 180°C (355°F) — lower heat keeps amines low.

2. Prepare vegetables

  • Place swede, carrots, and leeks on a lined baking tray.
  • Drizzle with 1 tbsp olive oil.
  • Toss gently to coat.
  • Add salt if tolerated.

3. Bake (covered first)

To keep the dish soft, low-irritant, and low-browning:

  • Cover tray with foil and bake 25 minutes.
  • Uncover and bake another 10–15 minutes, until vegetables are soft.


 Method — Air Fryer Version

(A little more browning but still gentle if heat is low.)

1. Preheat

  • Preheat air fryer to 160°C.

2. Add vegetables

  • Place swede + carrot first.
  • Cook 12 minutes.

3. Add leeks

  • Add sliced leeks on top.
  • Cook another 8–10 minutes, shaking once.

Adjust timing depending on air fryer size.
Goal: soft, lightly coloured, not crispy.
