Blueberries contain liberal salicylates and are suitable for a simpler food intolerance diet
Mix flour, sugar, salt and butter with hands. Press dough evenly on bottom of 2.5 cm up side ungreased 23 cm loose-bottom pain or spring form pan. Refrigerate for at least 15 minutes. Heat oven to 200 Celcius. Mix sugar and flour, and gently stir in 2 cups of blueberries, reserving 1 cup of the largest berries. Spread evenly over the pastry.
