INGREDIENTS
- 2 cups of cold or leftover ORANGE SWEET POTATO
- 1 cup of brown lentils (canned drained and rinsed)
- 1-2 Spring onion sliced thinly
- Salt for seasoning
- Rice flour
- Canola oil or other suitable for frying
Method
1 Blend together mash, lentils, and spring onions and season with salt
2 Shape into 6 patties
3 Coat each pattie with rice flour (thin coating)
4 Shallow fry in oil
