Ingredients
- 2 eggs, whisked
- 1 cup chopped bok choy 🟨
- 2 Tbsp chopped fresh chives
- 1 tsp mild olive oil (or sunflower oil)
- Pinch salt
Method
- Heat oil in non-stick pan.
- Add bok choy and cook 2–3 minutes until just wilted.
- Pour in eggs, sprinkle with chives, and gently scramble until cooked.
