- 1.2 kilogram of butternut pumpkin squash (moderate salicylate) peeled, seeded, chopped coarsely,
- 1 tablespoon of Nuttelex (or butter if dairy tolerated)
- 1 tablespoon finely chopped fresh chive (optional)
- salt for seasoning, optional pepper if tolerated (higher salicylate)
Note can you use other
- Steam or microwave the pumpkin until tender; drain well.
- Mash the pumpkin and butter in a large bowl until smooth. Stir in chopped chives; season to taste
