Garlicky White Bean and Parsley Puree

Serves: 8

Ingredients

  • 1 bulb garlic
  • 1 400g can cannellini beans
  • 1 tbsp oil
  • ½ cup parsley, finely chopped
  • seasoning (salt is salicylate friendly, pepper liberal salicylate)

Instructions

Place the whole bulb of garlic in the oven and roast for 20 minutes, or until soft. Once cooked, peel the garlic and place in a food processor with the can of drained beans, and process for a minute or two.

Add oils and process until smooth.

Stir through chopped parsley and season to taste.
