Asparagus, Beans and Goats Cheese with Poached Eggs (GFO)

Serves: 2

Ingredients

  • A splash malt vinegar (minor gluten, should be OK for gluten intolerance but not Celiac) l
  • 4 eggs
  • 12 asparagus trimmed
  • 1 cup cannellini beans, drained and rinsed
  • 20 g hard goat's cheese, shaved

Instructions

Poach eggs *

Meanwhile Steam the beans and asparagus together for 3 minutes, then transfer onto 2 plates.

Optional Drizzle with olive oil and season with salt and cracked black pepper if tolerated - liberal salicylates

Shave the goat's cheese over the top and serve.
