Friendly Reintroduction - Moderate Salicylates / Low Amine / Low Glutamate

🟡 Roasted Garlicky Pumpkin

Cooking Time: 40 minutes

Ingredients

  • 2kg pumpkin, peeled, cut into 3cm pieces. (use butternut pumpkin for FID)
  • 2 garlic cloves, unpeeled and 2 tbsp olive oil

Instructions

Preheat oven to 200°C /180°C fan-forced. Line 2 large baking trays with baking paper. Place pumpkin and garlic in a bowl. Add oil.

Season with salt

Toss to coat.

Arrange pumpkin mixture, in a single layer, on prepared tray. Bake for 40 minutes or until pumpkin is golden and tender.

Notes

ADJUSTMENT for FF2 - moderate salicylates, use butternut pumpkin and light olive oil or a low salicylate oil (e.g. rice bran, canola) (Original source TASTE - has some modifications)
