Ingredients
- 300g peeled carrots
- Small beetroot (about 150g)
- 250g sweet potato
- 3 cloves Garlic
- 2 tbsp Chives and or parsley (or some italian herbs if higher salicylates are tolerated)
- 2 cups home made stock with suitable ingredients
- 2 tsp salt
- 2 tbsp brown sugar
- 1/4 teaspoon of citric acid (optional)
Instructions
Peel veggies and process them through food processor until finely chopped
Put in microwave dish with remaining ingredients
Cook for 10-15 minutes (5 minutes high, 10 minutes medium) until veggies cooked.
Use stick blender to process to sauce consistency.
To make bolognese fry 500g mince until browned with some onion, shallot or spring onion. Add sauce mixture and bring to boil then simmer for 10 minutes. Sauce mixture should do 2 batches of mince.
