- 4-6 medium medium beetroot
- 2 teaspoons suitable oil
- 1 tablespoon of maple syrup (optional)
- salt for seasoning
Preheat oven to 200C
Top and tail the beets and peel with a vegetable peeler. Cut them in half lengthwise. If the beets are large, you may want to quarter them. Toss the pieces in the 2 teaspoons olive oil (and maple syrup if using) and transfer them to a sheet pan. Bake them until they are tender, about 40 minutes.
