BRAISED LEEK AND PEAS

This is really simple side dish, that goes nice with meat or chicken.

Serves 4

Ingredients

2 teaspoons Canola oil (Non Gm) or Rice Bran Oil
1 leek halved,  washed and  sliced white only
2 cups  frozen baby PEAS #, thawed
80ml (1/3 cup) Home made basic stock

80ml (1/3 cup) thin cream (optional dairy tolerated)  

Method

Step 1

Heat the oil in a medium saucepan over medium-high heat. Add the leek and cook, stirring, for 5-6 minutes or until slightly golden.

Step 2

Add the peas and stock (and cream if using). Bring to the boil. Reduce heat to low. Cook, stirring, for 2-3 minutes or until sauce thickens.

Step 3

Remove from heat. Use a potato masher or fork to mash slightly. Taste and season with a little salt.
