Carrot and Cabbage Quinoa Soup

Cabbage and Quinoa Soup

Serves: 6

Ingredients

  • 3 tablespoons suitable oil
  • 1 large leek chopped
  • 4 cloves garlic crushed
  • Optional up to 1 tablespoon grated fresh ginger (higher salicylates)
  • 4 large carrots cut into matchsticks
  • 6 cups water with salt (or home made chicken or vegetable stock using suitable ingredients)
  • 2 cups cooked quinoa
  • 2 cups thinly sliced savoy cabbage (or green cabbage)
  • Optional up to 1/2 cup of coriander (cilantro)

Instructions

Heat pot over medium heat. Add the oil. When the oil begins to shimmer, add the leeks, cook and softened

Add the garlic, (ginger optional) and carrots and cook for 5 minutes or more.

Add the water and salt (or stock) and cooked quinoa and simmer for about 10 to 15 minutes or until carrots reach desired tenderness.

Add in cabbage and cook a few more minutes; this doesn't take long.

Turn off heat and add the cilantro (optional)
