🟢 Baked “Honey” Coated Chicken

Ingredients

  • 1.5 Tablespoons of Butter or Dairy free spread
  • 1.5 Tablespoons of light olive oil
  • 1 ½ Tablespoons garlic powder
  • 1/3 – 1/2 Cup of rice syrup (can use honey if salicylates are well tolerated)
  • 1/4 teaspoon citric acid
  • 6 skinless chicken thighs
  • pinch salt
  • Sprinkling or parsley or chives

Method

1. Heat the oven to 190°C. 

2. Add butter / olive oil to a large pan over medium heat and cook until lightly bubbling for about 1 minute.

3. Stir through rice syrup (or honey if tolerated), bring to a boil then reduce heat to low.

4. Coat each piece of chicken in the sauce.

5. Pop chicken pieces into a baking dish and pour the rest of the sauce over the top.

6. Bake in oven until cooked, about 30 minutes.

7. Before serving, turn the chicken pieces through sauce with tongs to get another good coating and sprinkle with parsley or chives
