Leek and White Fish Penne Pasta Bake

Serves 2 can be doubled for 4 people

For 2 people you need


  • 2 leek washed and sliced
  • 2 Tablespoons of Butter
  • 175g penne pasta
  • 3/4 cup of crème fraiche (or half/half cream and sour cream fraiche)
  • 2 small fresh white fish fillets (no bones)
  • 1/2 cup of home made bread crumbs 


  1. Fry the leeks in 1 tablespoon of butter until very soft, about 10-15 mins. Remove leeks from pan and fry fish. Once cooked flake the fish into large chunks, add back leeks and stir through creme fraiche (or half each of cream and sour cream). Lightly season with salt
  2. Meanwhile, boil the pasta and heat the grill. Drain the pasta and stir into the sauce, season to taste with salt, then tip everything into a small baking dish. Scatter with the crumbs and grill until golden and crisp.
