Cashew Chicken with scalloped potatoes, braised red cabbage and green beans

To make scalloped potatoes

Slice potatoes thinly using a mandoline  (we use 100 gram of peeled white potatoes per person)

Toss sliced potato in oil. Then lay on a baking tray, lined with baking paper, and sprinkle with salt.

Bake for 30 minutes (with the cashew chicken)

Variation swap scalloped potatoes to sweet potato bites – (moderate salicylates)
