Brown Rice with Pumpkin and Cashews (S)

Moderate Salicylates

Microwave or steam 1 to 1 &1/2 cups diced butternut pumpkin (S) 1 cm cube.

Heat suitable oil in pan, add pumpkin and 1/3 cup of cashew, and just a little maple syrup (optional).

Add 2 cups of cooked brown rice. Can use quick cook Sunrice brown rice if you wish. Stir through.

Garnish with spring onion.

Serves 2 or 4 people as a side.
