Sweet Potato and Lentil Patties (S)

INGREDIENTS

2 cups of cold or leftover ORANGE SWEET POTATO*/potato mash (equal amounts) – dairy free for vegan

1 can of brown lentils (large 400g) drained and rinsed

1-2 Spring onion stems sliced thinly

Salt for seasoning

Rice flour

Canola oil or other suitable for frying

Blend together mash, lentils, and spring onions and season with salt

Shape into 6 patties

Coat each pattie with rice flour (thin coating)

Shallow fry in oil
