Sweet Potato and Lentil Patties (S)

Serves 4

INGREDIENTS

2 cups of cold or leftover ORANGE SWEET POTATO (S)/potato mash (equal amounts) – dairy free for vegan

1 cup of brown lentils (canned drained and rinsed)

1-2 Spring onion sliced thinly (1)

Salt for seasoning

Rice flour

Canola oil or other suitable for frying

Blend together mash, lentils, and spring onions and season with salt

Shape into 6 patties

Coat each pattie with rice flour (thin coating)

Shallow fry in oil

Notes

(1) for low fodmaps use green part of spring onion only.
