Serves 4 as a side for breakfast or Dinner
Ingredients
1 large can of Red Kidney Beans rinsed or drained (can use other if wish e.g. pinto, navy, mixed bean)
1 teaspoon of canola oil
1- 2 clove of garlic crushed
2 spring onion (scallion) white stems sliced thinly
1/2 stalk of celery thinly sliced (optional)
1/2 cup pear basic sauce (blitzed canned pears in syrup)
3-4 strands of saffron dissolved in 3 tablespoons of water
1/16 -1/8 teaspoon citric acid
Pinch of salt
1 tablespoon of Golden Syrup
1 tablespoons of brown sugar

Heat oil add garlic, shallot (and if using celery) and beans to small pot and cook on medium for 2 minutes

Add other ingredients bring to the boil, then turn down low and simmer until sauce has thickened and reduced (about 15 minutes)
