Choko (also known as Chayote) is used a lot in Asian Stirfries, it is also good baked, steamed and cut thinly added to coleslaws and salads.
Simple Choko Stirfry
- 1 Tbsp suitable oil
- 2 Chokos peeled and cut in thin apple like wedges/strips
- 2 Garlic Cloves
- Salt to taste.
- Steam peeled choko for 3 minutes
- Heat oil, sauté the garlic until fragrant, about 20 seconds. Add choko and stir-fry for 2 minutes or until it has a slightly translucent appearance but still quite firm.
- Remove from heat and season with salt
- Serve and enjoy!
Variation: add CARROT* strips (moderate)
