Saffron Rice

saffron threads Good pinch of

1 tablespoons of ghee or butter (or Oil No Dairy  spread e.g. Nuttelex)

1 cup of rice

1 and 1/2 cups of water

pinch of salt


Heat oil, (or other fat source) in a saucepan over medium heat.  Stir in rice. Add boiling water and bring to the boil. Stir in saffron, reduce heat to low, then cover and simmer, stirring occasionally, for 20 minutes until rice is tender. Cool, then fluff with a fork. Optional Garnish with coriander or parsley.
