Basic Roast Chicken

Heat oven to 200C/180C fan/gas 6. Sit the chicken in a good-sized roasting dish or tin. Push your fingers between the breast and skin to separate, push in some of the softened butter (or suitable spread DF) and gently spread over the breasts without tearing the skin. Rub the rest  all over the outside of the chicken.  Roast for 1 hour until juice runs clear, and then let sit covered in alfoil for 10 minutes befor serving

If roasting vegetable add 20 to 30 minutes into cooking – cut in medium chunks –

Notes

Skin should be removed for low chemical – low amines,
