Rice Cakes with Maple Cashew Spread

For this snack you will need

  • 2 thin Sunrice rice cakes (or other suitable brand)
  • 2 teaspoons of homemade cashew butter or suitable store brand cashew spread (e.g. Macro Cashew Spread available from Woolworths or Melrose Cashew Spread from Health food shops)
  • 1/2 teaspoon of pure Maple Syrup (not imitation)

Mix together the cashew butter/spread with maple syrup. Spread over one of the rice cakes then top with the other.


For a strict food intolerance diet limit to 1 serve of the maple cashew spread.

Optional – omit maple syrup and instead spread one rice cake with Brown Rice Syrup and the other rice cake with up to 2 teaspoons of cashew butter/spread – join together and enjoy. (note some rice syrups may contain ingredients that contain gluten)

Optional if not on a strict diet – replace plain rice cake with a Sunrice: rice and quinoa cake (as shown in picture)
