Pumpkin, Cabbage, (colcannon) Mash WITH SPRING ONIONS (S)

For Pumpkin Colcanon  for 4 people you will need

To prepare

Heat oil in large frypan to medium heat, fry cabbage until soft about 5 minutes set aside

Place about 2 cm of water in pan, add a little salt and bring to the simmer. Add pumkin and cook for about 15 minutes until soft. Drain and then add back to the pan. Add milk and mash with a fork. Season with salt (not too much) stir in cabbage and spring onion

Nice served with lamb or chicken
