1 cup caster sugar
1tsp vanilla essence
1 level tsp GF cornflour
1tsp WHITE VINEGAR (optional, will work without – do not use for strict diet)
4 egg whites
- Preheat oven to 150 degrees C. Line a baking tray with baking paper. Draw a 23cm circle on the paper.
- In a large (very dry bowl), beat egg whites until stiff but not dry. Gradually add in the sugar, about 1 tablespoon at a time, beating well after each addition. Beat until thick and glossy. Gently fold in vanilla extract and cornflour, (and vinegar if using)
- Spoon mixture inside the circle drawn on the baking paper. Working from the center, spread mixture toward the outside edge, building edge slightly. This should leave a slight depression in the center.
- Bake for 1 hour. Cool on a wire rack.
