Mixed Vegetable Stirfry

Serves 4

  • 3 cups of red cabbage shredded
  • 1 large choko , sliced thinly (julienne)
  • 1-2 celery sticks sliced on an angle
  • 1 small CARROT peeled, halved and sliced thinly (julienne) (Note 1)
  • 2 Spring onion/shallot stem sliced on an angle
  • 1 clove of garlic
  • Low Salicylate Oil for cooking (Rice Bran or Canola)

Heat oil in a pan or wok (medium to high), add garlic cook for 20 seconds, (want golden not burnt) then add vegetables stir fry for a couple of minutes or until texture you like

Note 1: leave out CARROT for low salicylate diet
