Maple Carrots and Parsnips (S)

Moderate Salicylates

Serves 4

CARROTS (S) sliced and peeled 2 cups (500 mL)
PARSNIPS(S) , sliced and peeled 2 cups (500 mL)
water 2 Tbsp (25 mL)
 maple syrup 1/2 cup (125 mL)
Butter (or suitable df spread) 2 Tbsp (25 mL)
   
Parsley, chopped 2 Tbsp (25 mL)
 
  1. Combine carrots with parsnips and water.
  2. Microwave, covered on High power for 10 minutes, stirring halfway through; drain.
  3. Stir in maple syrup and butter  until richly glazed. Sprinkle with chopped parsley.
