Lentil and Potato Patties
- 1 and 1/2 cups cold mashed potato (leftovers or freshly made and cooled – use a little DF spread or if dairy tolerated butter when mashing)
- 2 cups of canned brown lentils (about a 400g canned brown lentils, rinsed and
- 1 egg
- 1 cup of home made gluten free or standard breadcrumbs or 1/2 cup (50g) packaged breadcrumbs
- salt to season
Mix together ingredients, form into patties and fry..
In the picture the lentil and potato patties are served with “fancy” lettuce leaves and savoury pear sauce. This meal idea is friendly using fancy lettuce, or failsafe strict if you swap to iceberg lettuce.
