Garlic White Bean Dip

Garlic White Bean Dip

Serves: 4

Ingredients

  • 1 cup  of  cannellini beans from a can  drained and rinsed   
  • 2 cloves garlic
  • 1 tablespoon of water and 1/4 tsp citric acid
  • 1/4 cup suitable oil
  • 1/4 cup (loosely packed) fresh Italian parsley leaves  

Instructions

Blitz with hand blenders. Season with salt to taste.  food processor. Pulse until the mixture is coarsely chopped. Season with salt (not pepper), to taste. Transfer the bean puree to a small bowl.

Notes

If able to tolerate a more liberal food intolerance diet you can use 1 tablespoon  ofLemon Juice (A) (S) instead of citric acid.
