Chicken and Persimmon Salad with cashews (S)

Serves 2


  • 1 Persimmon (S) cut in half and thinly sliced
  • 1 chicken breast poached and sliced
  • 1/4 cup flat leaf parsley leaves
  • 1 spring onion stem (white part) sliced
  • 2 Tablespoons of chopped raw cashew (you can roast for a few minutes close to serving if you wish)
  • Lettuce.

In a bowl toss through persimmon, parsley and lettuce

Divide and serve on two plates

Top with sliced chicken and sprinkle with cashews

Then drizzle with suitable dressing.
