- 1 PERSIMMON (S) cut in half and thinly sliced
- 1 chicken breast poached and sliced
- 1/4 cup flat leaf parsley leaves
- 1 spring onion stem (white part) sliced
- 2 Tablespoons of chopped raw cashew (you can roast for a few minutes close to serving if you wish)
- Lettuce leaves :- iceberg or FANCY LETTUCE (S) of your choice.
Divide and serve on two plates
Then drizzle with suitable dressing.
