Chicken, Parsley and Persimmon Salad

Serves: 2

Ingredients

  • Lettuce
  • 1 Persimmon (S) cut in half and thinly sliced
  • 1 chicken breast poached and sliced
  • 1/3 cup flat leaf parsley leaves
  • 2 spring onion stem (white part) sliced
  • 2 Tablespoons of chopped raw cashew (you can roast for a few minutes close to serving if you wish) - you can use macadamia's if you tolerate amines well.

Instructions

In a bowl toss through persimmon, parsley and lettuce

Divide and serve on two plates

Top with sliced chicken and sprinkle with cashews

Then drizzle with suitable dressing.

Suggested Dressing : Ranch style or for dairy free Garlicky Maple Dressing
