Brussels Sprout Soup

Brussels Sprout Soup

Serves: 4 - 6

Ingredients

  • 2 tablespoons butter or 2 tablespoons or rice bran or canola oil
  • 1 Leek white part finely sliced
  • 1 kg prepared Brussels sprouts
  • 4 cups chicken stock or vegetable stock (home made with suitable ingredients)
  • 1⁄4 cup cream optional

Instructions

Heat oil or butter in a saucepan and cook leek on medium heat until tender.

Add brussels sprouts and stock and bring to boil.

Reduce heat and simmer for 15-20 minutes or until sprouts are cooked.

Puree in a food processor or use a stick blender

Return to pot and heat

Optional - stir through cream just before serving
