This is Nice for lunch, or served with steak or roast chicken.
- 1 small Orange Sweet Potato per person (100 to 200 grams no more)
- 1 TBS sour cream or Creme Fraiche (french sour cream) per person
Preheat oven to 200°C. Place the sweet potatoes on a baking tray. Roast in oven for 45 minutes or until tender.
- Cut a slit lengthways along the sweet potatoes and open slightly. Top with sour cream and sprinkle with chives.
