Baked Eggs and Chives

Serves 4

Ingredients

  • Canola oil or rice bran oil or butter to  grease
  • eggs
  • (1/4 cup) extra-light thickened cream, A2 cream, or  lactose free cream
  • 1 tablespoon finely chopped fresh chives
  • 1 spring onion sliced
    Season with Salt

Method

Step 1

Preheat oven to 200°C. Brush four 125ml (1/2-cup) capacity ovenproof dishes with oil to lightly grease. Crack an egg into each dish. Pour the cream evenly among dishes. Sprinkle with feta (if using), shallot and chives. Season with salt.

Step 2

Place dishes on a baking tray. Bake in preheated oven for 10 minutes or until eggs are cooked to your liking.

Variation

  • sprinkle with just a little plain FETA  ^ (for Simpler Approach – if not too sensitive to amines)
