Baked Butternut Pumpkin, Asparagus and Chickpeas

This is really nice served with lamb

Ingredients

  • 300 grams BUTTERNUT SQUASH – PUMPKIN
  • 1/2 cup Chickpeas canned (optional)
  • 1 Bunch of ASPARAGUS
  • 1 Tablespoon Suitable Oil
  • 2 Garlic Cloves
    Method
  1. Crush garlic add to oil in a bowl
  2. Cut pumpkin into cubes approx 1.5cm
  3. Add to bowl of oil with chickpeas (if using)
  4. Lay on tray and bake for about 30 minutes
  5. Remove from oven add Toss through Asparagus 
  6. Bake for a further 15 minutes
